Thank goodness I found you! That bacon looks wonderful. The bacon we have here is puny in comparison. I would have to go to a specialty shop for meat like this.

Back bacon is made by curing the part of the pig used for pork chops. As I remember, US bacon is like streaky bacon here - the belly pork cured. I like both, but back bacon is definitely a meatier treat!! Gorgeous sandwich it was too ;o)
