Ohhh...that looks very good. Apples and pork go so well together.Did you use pork loin or a roast cut?
I dont know how they are breeding pigs these days but it's hard to get pork that stays moist. Wasn't like that when I was a kid.

It was good - apple, onion, pork, potatoes - sage, s&p, chicken stock. Yum!
